Foods you can make cheaper than buying (RECIPES)

The Great Depression was a time of creativity with limited funds and government-imposed food rationing. Cakes made without flour…..pie crusts from crackers. Rice, dried beans, peas, potatoes, and such are top ingredients in inexpensive meal preparation. Nothing of value in life comes effortlessly. Here are some recipes from that era that young families are enjoying:

There are lots of things you can make that are much better tasting, less expensive and healthier than what is pre- packaged?

Depression foods seem to be my comfort foods.

  • Corn beef and sauerkraut (St Pat’s)

  • Cornbread (or Yeast cornbread-Dissolve 1 pkg yeast in 1/4 cup warm water, Scald: 2cups milk, Pour over: 1/3 cup lard or shortening and 1/3 cup of sugar. Cool and add 2 eggs, well beaten and 1 tsp salt and the yeast mixture. Mix well and add 4 cups flour and 1/2 cup cornmeal. Pour mixture into two loaf pans at this time and let rise until double. Bake in 350 degree oven for 45 mins)
  • Cornbread in a glass with buttermilk eaten  out of the glass with a long teaspoon.
  • Cornbread and milk for supper or loaf bread and milk.

    Caramel Dipping Sauce:

    1 cup granulated sugar
    6 Tbsp unsalted butter
    1/2 cup sour cream
    2 tsp kosher salt

    1. Heat sugar on medium-high in a heavy-bottomed 3-quart saucepan. As soon as sugar begins to melt, stir vigorously with a whisk or wooden spoon. When sugar comes to a boil, stop stirring.

    2. After sugar crystals have melted (and sugar is dark amber in color), immediately add butter to pan. Whisk until butter has melted, then remove from heat.

    3. Slowly add sour cream and salt and continue whisking until incorporated. Whisk until caramel is smooth. Let cool in pan for a couple of minutes before pouring into a mason jar. Let cool to room temperature. Store in fridge for up to 2 weeks. Warm before serving.

    Always, when making candy stir only with wooden spoon or wooden paddle.

    Make sure it is not too humid in your home when you make this. (I have a humidifier I
    use in the winter and I cannot make candy when it has been on or when it is rainy or snowy outside)

    VERY SIMPLE RECIPE
    Butter 9×9 inch or 7×11 inch metal pan generously. Do NOT use glass.
    Scatter about 1/2 c. coarsely chopped nuts of your choice in the bottom. (Some like to toast
    the almonds or pecans first.)

    In heavy 8 inch skillet let melt 1 stick real butter and 1 c. brown sugar, well packed,
    over low heat. Increase heat to medium and cook to 275 stirring constantly.

    Spread in buttered pan. Scatter bits of broken milk chocolate bars (about one 4 oz bar)
    on top and spread over top.

    ANOTHER SIMPLE RECIPE USING WHITE SUGAR, INSTEAD OF BROWN

    1 c. sugar
    1 stick butter
    1/4 c. water.
    Boil til caramel colored. Spread over 1-1/2 c. broken pecans. Let cool. Break into pieces.
