Hamburger Meat?

Have a lb of hamburger meat and looking for something different?
Casseroles, are very versatile, fast and easy. You can add, omit and substitute to your hearts content and it will usually come out pretty good.
Hamburger, Rice, Cheese Casserole
1 lb ground beef
1 tbsp olive oil
3/4 cup finely chopped onion
1 1/2 tsp salt
Dash of pepper
1/2 small bay leaf
1/8 tsp each -garlic powder, thyme and oregano
1 can (10 1/2 oz) condensed cream of mushroom soup
1 can ( 1lb) tomatoes
1 cup minute rice
2 or 3 slices American cheese (cut into 1/2 inch strips)Brown meat in olive oil. Add onion. Cook until tender. Stir in seasonings, soup, tomatoes and rice (from the box). Now bring mixture to a boil, reduce heat, simmer for 5 minutes. Stirring often. Spoon into 1 1/2 quart baking dish, crisscross cheese on top. Broil until cheese melts.

This one is also quick and easy!

Chili Pizza
1 lb ground beef
1 pkg (1.25 oz) McCormick Chili seasoning mix
1 can (14 1/2 oz) stewed tomatoes (cut up)
1 can (14 1/2oz) pinto or kidney beans (I do not add these)
2 cups shredded cheddar cheese
1 can (4 oz) sliced black olives8 large burrito size flour tortillas

Brown ground beef, drain. Stir in seasoning mix and tomatoes, cook 5 -10 minutes.

Arrange tortillas in a circle on a 12-inch pizza pan, overlap edges where needed.

Spoon ground beef minture onto tortillas. Top with cheese and olives.
Bake in 400 degree oven 5-10 minutes or until cheese is melted.

Cincinnati Chili

8 oz spaghetti
1 lb. ground beef
2½ tsp. chili powder
1 jar or can spaghetti sauce
1 can kidney beans-drained
Cook spaghetti. Drain. Meanwhile brown ground beef. Stir in chili powder. Add spaghetti sauce and beans. Simmer 5 minutes. Stir in cooked spaghetti. Serve topped with diced onion, tomatoes and shredded cheese.

Calico Beans
1 lb. ground beef
½ lb. diced bacon
1 C. chopped onion
½ C, diced green pepper (optional)
½ C. ketchup
½ tsp. salt
¾ C. brown sugar
2 tsp. vinegar
1 lg can pork & beans
1 can garbanzo beans (chick peas)-drained
1 can kidney beans-drained

Brown ground beef and bacon. Add onion and cook ’til transparent. Add ketchup , salt, br. sugar, and vinegar. Stir in beans. Simmer until heated through.

Taco Casserole
About 1/2 Bag of tortilla chips–I use mission brand
1# Ground Beef–I use 93/7 lean
1 pkt Taco Seasoning
1 can of tomatos and chiles–I use Rotel Mexican Fiesta
1 Can Refried Beans–I use fat free
2 C Monterrey Jack Cheese, Shredded
1 small can diced olives
1 med tomato, diced
Sour Cream
Salsa

Brown ground beef and drain. Add taco seasoning, but omit water specified on package. Add canned tomatoes, simmer for 10 minutes. Cover bottom of 9×13 pan with chips, I cover my pan with Reynolds Non-Stick foil first. Layer ground beef mixture, then beans, cheese, olives and diced tomatoes. Bake uncovered at 350 for 20-30 minutes or until cheese starts to brown. Serve with sour cream, salsa, shredded lettuce, guacamole, etc.

Creamy Pasta Bake

1 jar spaghetti sauce
1Pkg. rotini noodles, cooked and drained
1 1/2 c. sour cream
1/4 pkg. of frozen spinach, thawed and drained
1/2 c. grated parmesan cheese

Cook hamburger-however much you want, and drain, mix in rest of ingredients. Bake in 9×13 pan at 375 for 25 min.

This is our favorite and by far the cheapest and quick.

potatoes(sliced thin)
1 med. onion(diced)
carrots (sliced thin)
green beans
cream of mushroom soup
1 1b. hamburger (sausage is good too)cooked and drained

I don’t have amounts because it just depends on how big of casserole I am making. But in what ever size of dish you want you layer potatoes, carrots, onion, potatoes, carrot, then dump green beans (water and all) then top with hamburger and finally cream of mushroom soup. Bake uncovered on 400 for about an hour (just depends how big and how thin you slice the potatoes. Also don’t forget to salt and pepper.

Really good and cheap!

Baked Spaghetti 1 c. chopped onion
1c. chopped green pepper
1 Tbsp. marg.
1 can tomatoes (28 oz), diced
1 can (4 oz) mushroom pieces
1 can (21/2 oz) sliced olives
2 tsp. oregano
1 lb hamburger cooked and drained
12 oz. spaghetti cooked and drained
2 c. shredded cheddar cheese
1 can (101/2 oz) cream of mushroom soup
1/2 c. water
1/4 c. parmesan cheeseIn a large skillet saute onion, pepper in marg. until tender. Add tomatoes, mushrooms, olives, and oregano. Add hamburger. Simmer uncovered for 10 minutes. Place 1/2 of noodles in greased 9×13 pan. Top with 1/2 vegie mixture. Sprinkle with 1 c. cheese. Repeat layers. Mix the soup and water until smooth, pour over casserole and sprinkle with parmesan cheese. Bake uncovered at 350 for 30-35 min.

Taco CasseroleUse a 9 x13 pan.

Crush tortilla chips to cover the bottom of the pan.
Brown 1  to 1 1/2 hamburger – add taco seasoning, onion….whatever you like in your taco meat.
Put the meat on top of the chips, then put 2 cans of drained corn on top of that.
Mix 2 can of cream of mushroom soup and 1 can of milk – pour over the corn.
Top with shredded cheese.

Bake at 350 for about 30 minutes. – it is really good just like this. But; at the table top with lettuce, tomatoes, guacamole, sour cream – salsa…whatever!

Taco Casserole

Baked Ziti

1 LB Ground Beef
1 Jar Spaghetti Sauce
1 can Hunt’s tomatoes with garlic, basil and olive oil
12 oz box of Garden Rotini (the tri-color spirals)
Mozarella Cheese
Parmesan Cheese

Brown ground beef, add spaghetti sauce, and tomatoes. Cook pasta until al dente. In 9×13 pan, 1/3 sauce, 1/3 noodles, sprinkle with parmesan, and mozarella. Repeat with remaining sauce. Bake, covered, at 350 for 30 minutes.

 

 

This is one of our favorites. a beirock is a staple around here – a German concoction of hamburger and cabbage wrapped in bread (kind of like a Hot Pocket) – but time consuming to make. This casserole is much easier and adds the great flavor of cheese.

Bierock Casserole

2 lbs ground beef
small onion, chopped
small head of cabbage, chopped
1 can condensed cream soup (chicken, celery, mushroom)
2 cups shredded cheddar
2 cans crescent rolls

Brown beef and onion in large skillet or dutch oven. Drain. Stir in cabbage and cover to steam til cabbage is soft. Add soup and mix in just til warmed. Spread one can crescent rolls in the bottom of a greased 9×13 pan, spreading to cover and close seams. Pour beef mixture over, spread evenly and cover with cheese. Separate triangles of second can of rolls. Space evenly over top (they won’t cover completely). Bake at 350 about 20 minutes til cheese is melted and top crust is golden (don’t underbake or the bottom crust will be soggy).

Almost Hamburger Helper’ Mix in a Jar.
2 cups nonfat dry milk
1 cup corn starch
1/4 cup beef bouillon powder (there are recipes on line if you wish to make your own Bouillon so you don’t get the Gluten Free & MSG!)
2 Tablespoons onion flakes
1 teaspoon dried basil
1 teaspoon thyme
1 teaspoon black pepper
2 Tablespoons dried parsley
1 Tablespoon garlic powder

 

Mix all together and store in airtight jar and use for recipes below.

NOTE: One can buy seasonings at Walgreens when they were on sale.

Chili Mac:
1 lb (or less) ground beef, browned and drained
1 cup water
1/2 cup (or add extra to stretch) macaroni noodles, uncooked
2 cans chopped tomatoes
1 Tablespoon chili powder
1/2 cup Almost Hamburger Helper’ Mix in a Jar (recipe above).
Combine all and simmer 20 minutes or until macaroni is cooked.

 

Stroganoff:
1 lb (or less) ground beef, browned and drained
2 cups water
1/2 cup Almost Hamburger Helper’ Mix in a Jar (recipe above).
2 cups uncooked egg noodles
1/2 cup sour cream
Combine all except sour cream. Simmer 20 minutes or until noodles are tender. Stir in sour cream and serve.

 

Potato Beef Casserole:
1 lb (or less) ground beef, browned and drained
3/4 cup water
6 potatoes, peeled and thinly sliced
1 cup frozen mixed veggies
1/2 cup Almost Hamburger Helper’ Mix in a Jar (recipe above).
Combine all and simmer, covered, until potatoes are tender, about 30 minutes, stirring occasionally. Remove cover and cook until excess water is evaporated.

 

Quick Lasagna:
1 lb (or less) ground beef, browned and drained
1/2 cup Almost Hamburger Helper’ Mix in a Jar (recipe above).
1 onion, chopped
2 cup water
16 oz tomato sauce
3 cup lasagna noodles, uncooked, broken in bits
1/4 cup parmesan cheese
2 cups mozzarella cheese, shredded
Combine all except mozzarella in large skillet. Bring to a boil, let simmer for 15 minutes or until noodles are cooked. Top will mozzarella. Turn off heat and let cheese melt.
